March in Japan marks the awakening of nature. Wild plants begin to sprout, transforming the landscape into a natural pantry. This seasonal shift becomes an invitation—not just to observe nature, but to reconnect with it.

On March 28th, in the historic town of Usuki, a unique event gathered nature lovers for a day of learning, foraging, cooking, and mindful immersion in the outdoors.


A Guided Wild Herb Foraging Experience

Led by wild herb expert Akashi Yamada, participants walked slowly through the fields, rediscovering plants that are often overlooked. What many once considered “weeds” revealed themselves as sources of nourishment and healing—reminding us that nature offers an abundant and accessible supply of food.

Participants learned:

  • which wild herbs are edible

  • their health benefits

  • how to prepare and cook them

From Field to Table: Cooking with Wild Herbs

The harvested herbs—such as fleabane, vetch, ground ivy, mugwort, goldenrod, sorrel, and sow thistle—were transformed into a simple yet delicious meal:

  • Simmered dishes

  • Tempura

These dishes were enjoyed with 100% brown rice, each bite carrying the essence of the land and the season.

After the meal, participants savored homemade dried kiwi and acorn tea. The tea’s slightly bitter, toasty flavor offered a warm and calming finish.


Mindfulness in Nature: Becoming One with the Earth

In the afternoon, participants lay down on the earth, fully immersing themselves in the natural surroundings. With soft grass beneath them, the gentle rustling of leaves, and the soothing guitar and singing, many felt a deep sense of intimacy with nature—a reminder that we are part of a larger ecosystem.

It was a moment to pause, breathe, and reconnect, far from the busyness of everyday life.

The day continued with grass cutting and farmland care. Rather than trying to control nature, the focus was on supporting natural ecosystems—allowing plants to thrive while maintaining the land’s original balance.
